Edible Economy

My colleagues -- if you can call them that (the dietitian, executive chef, and other intern) and I attended a seminar presented by Ken Meter. He presented some very intersting points. Illinois's currentt food system is taking money out of the communities by buying food from other states. Local food is the best path toward economic recovery. He mentioned that the majoiryt of IL food produce is being exported while we are importing almost everything for consumption. Top crops in IL are corn and soybeans. If regional consumers bought 15%, revenues of farmers would increase drastically. Therefore this would support having a local food hub which would help patch up the econmuy.

Also at this seminar we were treated with local farm fresh food. We ate fresh raspberries, blueberries, bread, as well as butter and goat cheese. I instantly became a fan of local food.
