Allergies Webinar

The wonders of techhnology still astound me. today we and numerous other health professionals across the US tuned in to lsiten to this webinar on allergies.

For a product to be considered "allergen free" specfic tests need to be performed.
1. Visual Test
2. Analytical Test - with test kits
3. Product Test - must test allergen free three times

They also warned that when cleaning never use compressed air always use a dry cleaning method or a vaccuum with a brush. with all this in mind. I now look at products and am very impressed when I see something that states it is "gluten free" or "dairy free" etc.

The webinar also talked about a system of flow-- on how to have a good operating system. This peaked my attention because I had a whole semester class on the food systems flow chart. This webinar brought up some very good points. In order to have a good system of flow you need to have a form of check points to ensurre quality. Check points such as internal audits, measuring systems performance in various ways, and having consisten reports by senior management. The PDCA cycle was brought up which is the plan, do, check, act system. This provides continuous improvement as well as creates an environment open to change.

All of these points are excellent and are things I need to remember during my career in food service management. A good operating system is crucial.
