In Conclusion

My time here in Normal, IL was short but I learned so much and made many friends. I was sad to go but excited to be able to use and apply everything I learned. Below is a compiled a list of everything I did.

  • Menu Planning for allergies, celiacs, and halal (muslim) 
  • Eating Disorder counseling sessions
  • Weight loss counseling sessions
  • Presented a lecture on intuitive eating and good nutrition
  • Standardized recipes for the bakery
  • Recipe testing
  • Special Olympics
  • Shadowed Unit Manager
  • Shadowed Unit Chef
  • Shadowed Lead Cook
  • Interviewed everyone that worked with campus dining in the administrative building
  • Shadowed a sanitarian during a sanitation inspection
  • Experienced a small part of planning a and organizing kitchen layouts
  • Attended marketing meetins
  • Gained experience with CBORD
  • Toured local farms
  • Worked one-on-one with dietitian and executive chef
  • Attended seminar on using local foods
  • Met with representatives from US foods 
  • Did write up for carbohydrates on ISU's website 
  • Analyzed nutrition for Metcalf elementary school
  • Sad in on job interviews for cooks/food service workers
  • Planned a special event - Winter's Picnic
  • Worked in Retail
  • Attending a Labor union Meeting
